There is literally nothing better than a plant-based meal that is also one pot, is there? Well, we put together the best vegan one pot dinners for you! These are our absolute favorites, and go-to dinners. When we are feeling pretty lazy, but gotta get down on the sweet vegan comfort food! I make one of these one pot dinners at least once a week!
Let’s start with possibly my favorite pasta dish of all time! This Vegan One Pot Caramelized Tomato Caprese Pasta. It is as delicious as it is beautiful.
Next, this is probably my other favorite pasta dish. This Vegan One Pot Mushroom Tetrazzini. It has a totally different feel though. It is so cozy and homey.
Now, I’m going to tell you about some very special soups! Like this total winner. This Vegan Spicy Thai Peanut Ramen has been the most popular recipe on the blog for months now. There is a very good reason for that!
This Vegan Wild Mushroom Stroganoff Soup is to die for! Seriously, you will be amazed that is tastes so dang good even though it is so dang easy!
Vegan French Onion Chowder is so freaking amazing and totally unique. A mix between French onion soup and a creamy chowder. This is comfort food at it’s best. It is a little more time consuming, but just as easy as the other recipes.
Then we have this super simple super outstanding Vegan Creamy Balsamic Mushroom Wild Rice Soup!
This Vegan Red Chili Burrito Skillet is technically not made in a pot, it is one skillet and it is sooooooo yummy! It’s also like so ridiculously easy.
Another great one that is a departure from soup and pasta, is this Vegan Butter Lentils and Potatoes. My take on the Indian Butter Chicken dish. This dinner is amazing!
If you are craving some veggies, this is Vegan Coq Au Vin is the perfect way to eat your vegetables! So perfect!
This Vegan Roasted Garlic Mushroom and Barley Stew is almost one pot. You roast the garlic first, and then add everything to the same pot. So, it has one extra step, but it is worth to eat this addictive, incredible stew!
