I still ate meat when McDonald’s came out with their McGriddle breakfast sandwiches. I was in my early teens, and my dad was busy, so he would often swing by and get us breakfast. It was then I discovered the glory of pancakes and sausage living in sweet harmony. I have never forgotten the McGriddle, however, I will never eat another one for obvious reasons. So, I wanted to create something super simple, healthy(ish), and really, really delicious with a similar flavor….
Holy cow, Christmas is on Sunday! So, let me lay this on you. You need these chocolate peppermint muffins in your life. They are literally the perfect muffin in every way. So light and fluffy, the exact amount of rise I wanted, so they create the best muffin top I have ever seen (which is obviously everyone’s favorite part of the muffin), the amount of peppermint is just right in contrast with the chocolate. Perfect, seriously. No, really, I am super serious.
I will be honest though, they are probably not the healthiest muffins ever, but ya know, I think it is totally fine to have a sweet breakfast every once in a while. Especially around the holidays. I would have to also say, that I am more vegan for the animals than I am for health reasons, but the amazing health benefits that come with being vegan are definitely not a downer! Like my friend Jenny always says, “eating a vegan baked good is like eating a salad, right?” I will have to say these may not be exactly like eating a salad, but they are a hell of a lot better for you than regular chocolate muffins!
So, let us have a little chat, do you have family coming into town? Well, I do, but it is just my brother whom I love more than anything in the world, and he does not stress me out. I hear though, that having family staying with you for the holidays can be a little bonkers. Make a batch of these! For real, this recipe makes 2 dozen muffins, they are great for several days and can be toasted and then I recommend placing a good slather of vegan butter on top. I promise you will please everyone, and not have to worry about breakfast for a few days!
They are so moist, yet some how still fluffy. Magically very pepperminty without it being overwhelming. Crunchy on top, soft in the center. Seriously, the perfect muffin! I hope you enjoy, and as always, if you have questions or feedback, I would love to hear it!
Ahhhh, pumpkin everything season! I love you so, however, a lot of what I see in stores are not vegan friendly, and super unhealthy to boot. Muffins, donuts, bread, chocolates, creamer, so many things. So, I have been trying to come up with my own quick snacks and breakfasts to make me feel like I can jump on the Fall flavored bandwagon. Two of my favorite, not-so-healthy breakfast foods are coffee cake and cinnamon rolls. I added a bit of flair to some otherwise boring muffins by incorporating a cinnamon swirl in the center to make a nice ooey gooey middle. Then to top it off, there is a crumble topping all to help make this the greatest muffin of all time!
Oh me oh my, these made me really feel like vegan food can do anything non vegan food can do. There is no stopping me, I will make everyone a believer. How can you turn down something so gooey, moist, flavorful, crispy and pumkiny? These are a little bit of a process, as there are three steps. So, it makes a bit of a mess(which is the story of my life) but they are really easy. The crumble, is literally just crumbled together, the batter is just throwing things together, and the cinnamon swirl is just a few ingredients whisked together.
I made the crumble topping and set it aside, made the cinnamon swirl, and set that aside. I then made the totally amazing pumpkin cinnamon batter, and place one scoop of batter, swirled some cinnamon mixture on top, then added another scoop of batter. Smoothed that out a bit and topped that with massive amounts of amazing coffee cake like crumble! The results were totally amazing, they went pretty fast in my house, and are a great on the go Fall breakfast to have ready and to run out the door with! Super amazing with a latte,btw. So, I know I have discussed my love of red velvet anything in length, but have I told you lately how much I love cheesecake? I do, I really do. It was my favorite dessert as a child, it was the only sweet I ever wanted. My dad used to buy cheesecakes for my birthday because I was obsessed. The other kids thought it was weird, and wanted tons of too sweet frosting on top of mediocre cake. I didn’t care if they thought I was odd. I knew good food. So, I have been playing around with an idea like this for a while, and couldn’t decide if I wanted to make red velvet muffins with a cheesecake like swirl, or vanilla muffins with a red velvet cheesecake swirl. I decided on the latter, and I think it worked out very well.
They have an amazing texture contrast that I totally love, they are not super sweet, but my husband argued that most muffins are cupcakes without the frosting. I suppose he is correct in this case, you could probably slap some frosting on top and call it a day. I really enjoy calling things muffins though since that means I can have it for breakfast (right?). This recipe got a little messy from the red food coloring, I always make a mess when I am using food coloring, but it is so simple and quick.
