Patak’s Sweet Mango Chutney is something I literally always have in my fridge and pantry. One of my favorite things to use it for, besides the obvious Indian Inspired dishes, is pizza. I love to top a spicy pizza with the sweetness of the mango. So I made you all a vegan Indian-inspired potato and cauliflower pizza. Then topped it with the sweet mango chutney so you could experience how incredible it is. I used Aloo Gobi as my inspiration for the potatoes and cauliflower and holy crap is it good!

What You Need For This Incredible Plant-Based Pizza:
- Pizza Dough: Store-bought or you can use my super easy vegan pizza dough recipe!
- Tomato Sauce: I recommend making your own pizza sauce for this one. That way you can add Indian spices to complement the rest of the flavors.
- Potatoes and Cauliflower: Fresh potatoes and cauliflower are the toppings.
- Cumin, Coriander, Turmeric and Garam Masala: To season the potatoes and cauliflower.
- Chili Pepper, Garlic and Ginger: These fresh ingredients are also used to flavor the veggies.
- Vegan Cheese: I used a combination of mozzarella and cheddar style cheeses.
- Red Onion and Cilantro: For topping.
- Patak’s Sweet Mango Chutney: My favorite part! Once the pizza is finished baking, you top the pizza with mango chutney and be prepared to have your socks knocked off.

There is a Curry Pizza House restaurant in Las Vegas and my husband loves it. I got the inspiration for this vegan Indian-inspired potato and cauliflower pizza from them. They have an Aloo Gobi pizza that I have been eyeing. It is not vegan however, so I have been dying to make my own. The only thing my husband says the pizzas are missing is some kind of chutney. So I have made you my perfect version. Sweet, spicy and so dang delicious.

Vegan Indian-Inspired Potato and Cauliflower Pizza
Ingredients
For The Tomato Sauce
- 1 teaspoon Vegetable oil
- 3 Cloves Garlic, finely chopped
- 1/2 teaspoon Garam Masala
- 1/4 teaspoon Cumin
- 1/4 teaspoon Turmeric
- 1 1/2 Cups Canned tomato sauce (tomato puree not ketchup)
- Salt to taste
For The Cauliflower
- 1 Cup Russet potatoes, diced
- 1 Cup Cauliflower, cut into florets
- 1/4 Cup Sweet onion, diced
- 1 teaspoon Ginger, grated
- 4 Cloves Garlic, grated
- 1 Green chili, finely diced
- 2 Tablespoon Vegetable oil, divided
- 1/2 teaspoon Cumin
- 1/2 teaspoon Garam Masala
- 1/2 teaspoon Coriander
- 1/4 teaspoon Turmeric
- A few pinches of salt
For The Pizza
- 1 Batch Pizza dough(about 1 pound), homemade* or store bought
- 1 1/2 Cups Vegan cheese, I like to use a combo of cheddar and mozzarella style
- Red onion and cilantro for topping
- Patak's Sweet Mango Chutney for topping**
Instructions
- If you are using store bought dough, bring it to room temperature. If making your own, prep and let rise. You can prep the rest while it rises.
- First, make the tomato sauce. In a small saucepan on medium high, heat the oil. Add the garlic and all the spices. Toasting for 1-2 minutes. Reducing heat as needed.
- Pour in the tomato sauce and stir. Bring to a simmer, reduce heat to low and simmer for about 15 minutes, while you make the potatoes and cauliflower.
- In a medium sized mixing bowl, combine the potatoes, cauliflower, onion, ginger, garlic and chili.
- Drizzle 1 tablespoon of the oil over the veggies and toss to coat. Then sprinkle in the cumin, garam masala, coriander, turmeric and a few pinches of salt. Toss to coat completely.
- Heat the remaining 1 tablespoon of olive oil on medium high in a large non-stick skillet. Add the potato and cauliflower mixture to the pan. Sauté, reducing heat as needed for 10-15 minutes or until the potatoes are soft.
- When everything is ready, dough included, preheat the oven to 425 degrees(F).
- This recipe will make 2 pizzas. Divide the dough in 2 and roll out to your desired thickness. Place the crusts on to pizza pans.
- Evenly divide the tomato sauce and smooth out. Then spread the potatoes and cauliflower over each pizza evenly. Then sprinkle on the cheese evenly.
- Bake for 12-15 minutes or until golden brown and the cheese has melted.
- Top the pizzas with sliced red onion, chopped cilantro and dollops of Sweet Mango Chutney all over the pizzas.
- Slice and serve!
