Shepherd’s pie has been and always will be one of my favorite comfort food meals. So, when I stopped eating meat, I did a lot of experimenting to come up with my favorite way to make vegan shepherd’s pie. I do love a classic with fake meat and potatoes, but when I want something a little different, I make this. This fancy vegan shepherd’s pie starts with caramelized onions, giving it a sweetness that does something so magical to the entire dish. Then mushrooms are used in place of meat. Then, to make it extra fancy, the topping is a garlic cauliflower and parsnip puree instead of potatoes.
This is the most amazing example of all veggie comfort food. Mushrooms, carrots, peas, corn, then cauliflower and parsnips. You seriously won’t even think about how this whole thing is made of only veggies. This may seem fancy and complicated, but it is really a meal I think anyone can make. It’s very straight forward and the most time consuming part is just caramelizing the onions.
Don’t get me wrong, there is a time and place for a regular classic type vegan shepherd’s pie. However, if you have been following along with me for any significant period of time, you’ll know, I don’t like to create recipes that have been done before. The internet is over saturated with vegan versions of shepherd’s pie. So, I wanted to do it my way and give you guys another option!
My husband said he was skeptical of my version, but now he craves it. It is seriously so freaking good, something a little out of the ordinary, but that is how I love to cook. A unique take on classics with incredible flavor. Recipes that will make you want to cook at home instead of going out to eat. Cause you know, you can make something better!

Very Fancy Vegan Shepherd's Pie
Ingredients
Garlic Cauliflower Parsnip Puree
- 1 Large Head of Cauliflower, cut into florets
- 10 Cloves Garlic, peeled
- 2 Large Parsnips, chopped *
- 1/3 Cup Non dairy milk, I used soy milk (plus more as needed)
- 2 Tablespoons Vegan butter, I used Earth Balance
- Salt and Pepper to taste
Vegetable Filling
- 2 Tablespoons Olive oil, divided
- 1 Large Sweet onion, diced
- 1 Tablespoon Agave syrup
- 4 Cloves Garlic, chopped
- 2 Large Carrots, chopped
- 24 Ounces(1 1/2 lbs.) Baby bella mushrooms, chopped
- 1 Tablespoon Tomato paste
- 2 Tablespoons All purpose flour or gluten free all purpose flour
- 2 Cups Vegetable broth
- 1 teaspoon Liquid aminos or soy sauce
- 2 Sprigs Fresh thyme
- 1 Sprig Fresh rosemary
- 1 Cup Corn, canned or frozen
- 1/2 Cup Peas, fresh or frozen
- Salt and Pepper to taste
Instructions
- Make the puree first. Bring a large pot of water to a boil. Then add the cauliflower, garlic and parsnips to the water. Boil for 10-12 minutes, or until the cauliflower and parsnips are very tender.
- Drain the water and add the cauliflower, garlic and parsnips to a blender. Add the non-dairy milk, vegan butter and a few pinches of salt and pepper. Blend until nice and smooth. If you are having a hard time blending it, add a splash more non-dairy milk at a time until it blends. Taste and adjust seasoning. Set aside.
- Now, make the filling. In a large pot, heat 1 tablespoon of olive oil on medium high. Add the onion.
- Spread the onion out evenly in the pot. Just leave the onion alone for about 5 minutes to let them start to get brown. Then add the agave to the onions and toss to coat. Spread back out in the pan, and leave alone again. Reduce heat as needed. Toss and spread back out every 2-3 minutes until the onions are very brown and caramelized. About 15 minutes total.
- Then add the garlic and carrots. Season with a pinch of salt and pepper. Saute for about 5 minutes to soften. Then add the mushrooms and drizzle the remaining 1 tablespoon of olive oil on top.
- Toss the veggies together, then saute for another 10 minutes or until the mushrooms are brown and juicy. Season with another pinch of salt and pepper.
- Now, add the tomato paste, and toss to coat the veggies with the tomato paste.
- Next, add the flour to the veggies and toss to coat them.
- Then add the vegetable broth, aminos or soy sauce, thyme, rosemary and a pinch of salt and pepper. Stir to combine and reduce heat to medium low. Simmer for a minute until it starts to get thick.
- Add the corn and the peas, and continue to simmer for 2-3 minutes to begin cooking the corn and peas. Taste and adjust seasoning.
- Preheat the oven to 400 degrees(F.)
- Remove the sprigs of thyme and rosemary from the filling. Add the filling to an 8x8 inch baking dish. Smooth it out.
- Then put the cauliflower puree on top. Smooth out then create texture with a fork so some of the tops brown nicely.
- Bake for 15-20 minutes or until the top is nice and brown. Serve immediately.

I just tried this recipe (and improvised because I didn’t have everything on hand) but that cauliflower/parsnip puree was divine!! What a lovely idea. I was trying to avoid flour and potatoes for a dish and this did not disappoint! I ended up adding the cauliflower/parsnips/garlic to the water and got them all to boil together, and left in some of the water and blended the puree with that, negating the need for the milk. So so good! Thank you for all the thought you put into delicious, hearty, vegan foods!
I didn’t have cauliflower/parsnips, so I used potatoes & I also deglazed the pan with the caramelized onions with some red cooking wine. So delicious!
I’ve made so many of your recipes. This is phenomenal!! I didn’t have enough mushrooms so I used some sweet potato cause it’s sounded tasty, and it really was so good. A versatile dish!
Hi! I am looking for something I can make ahead and then reheat on Christmas Day so I don’t spend the day cooking. Do you think this recipe would work for that? Also, we try to avoid corn in our diet. Do you think this would taste as good without the corn? Or something else added as a replacement? It sounds amazing! Thanks!

A little too much for an 8×8 so scooped some filling out, also make sure filling has thickened more otherwise it will run out of the dish as topping is heavy 😜
