Chicken and waffles is a very interesting Southern staple. It sounds strange, but it is pure perfection. It was also just itching to be turned into a fantastic vegan dish. I have seen recipes for vegetarian chicken and waffles using pre-made fake chicken and pre-made waffles. So I wanted to create recipe from scratch that you could make pretty easily, and I would like to say, I think this may be the best vegan chicken I have ever tasted. I also made a Belgian style waffle, and it is the perfect pairing. Light, crisp and fluffy waffles, topped with the perfect vegan chicken. Pour on top my spicy maple syrup, and prepare for one of the best meals of your life!
I have been playing around with this idea for a while now, and I finally decided that the perfect base for the vegan chicken would be chickpeas. Mashed chickpeas mixed with poultry seasoning, no chicken broth and vital wheat gluten, make the perfect chicken tender type situation! They were absolutely delicious in every way! The texture was great! The taste divine, and the combination of waffle, chicken and syrup was outrageous!
I had some friends over for Sunday brunch, and I made a big batch of citrus Sangria, and these chicken and waffles. They were a big hit, and while filling and carby, I actually didn’t feel like total crap afterwards like I do when I am eating lots of other brunch and breakfast carbs. These are way lighter and healthier than you might think. I still had energy after eating waffles, which is saying a lot. I usually feel like I need a nap immediately after eating any waffles or pancakes. This dish is different!
You also don’t really need any special equipment to make the chicken which makes me feel great about sharing this with you. I know not everyone has a food processor or blender. All you have to do is mash your chickpeas, I just used a potato masher, but a fork would work, and then stir in the remaining ingredients! Voila, you are ready for your best ever vegan chicken! Obviously, you need a waffle iron for the waffles, but that is it. Also, I think everyone needs a waffle iron anyways. You can do amazing things with it!

Thanksgiving is next week, and I am definitely getting in the holiday mood. Besides actually cooking and baking, my other favorite thing to do is look at food, plan out menus, and brainstorm new ways to show the world how easy being vegan can be. We live really close to my husband’s family, and we go over to his brother’s house for Thanksgiving. So many people come, and I get so excited about all the food people bring. There are a lot of meat eaters of course, but I am definitely among other rabbits. My husband usually makes a seitan wellington, and the greatest vegan mashed potatoes of all time.
In the spirit of the holidays, I was brainstorming great holiday breakfasts, I have a few more up my sleeve as well. I was thinking about what would be quick and easy for guests or just yourself of course, but also super festive. I had never seen a cranberry maple syrup before, and I thought is sounded really delicious. It is,btw. Also, I have seen pumpkin waffles, but I really love the added texture of the walnuts. This whole flavor combination, pumpkin,walnut and cranberry, was really, really delicious.
We bought a waffle iron pretty recently actually, and it was the best decision ever. My husband spent weeks waffling everything. I highly recommend getting one if you don’t have one already. I love how easy it makes things. If truth be told, I hate watching and flipping pancakes. A waffle iron makes everything so much easier. They even have a light to tell you when the waffle is ready. This is a simple recipe that is made even easier by the use of a waffle iron.
These waffles are also insanely delicious with just regular maple syrup if you feel like skipping that step. I recommend both the cranberry and regular syrup. They tastes amazing with both. I love the color of the cranberry syrup though, it is so beautiful!

My husband and I will have been married for five years in a few months. I wanted to get married on Halloween, but the year we got married Halloween fell on a Monday, so we decided to get hitched the Saturday before on October 29th. For our honeymoon, we got a cute log cabin in the Smokey Mountains in Tennessee. With October fast approaching, and year five being kind of a milestone, I have been thinking a bit about our honeymoon. We had so much fun. The leaves were colors I had never seen before( being that I am from the super south, and leaves don’t change color) it was one of the most beautiful things I had ever seen.
Towards the end of our trip, we went to a place called The Apple Barn in Pigeon Forge. They have everything an apple lover could ever want. We shared some cider and some fritters, and they were amazing! We tried to return in January, this time with our daughter, and they were closed for remodeling. It was devastating. I really wanted to share all that amazingness with our daughter. So, while thinking about how much I love it in the Smokey Mountains, and our super cool honeymoon, I found The Apple Barn apple fritter recipe. I then made is vegan, refined sugar free and turned it into a waffle.
They are amazing. Super fluffy, light and just sweet enough without killing you for the rest of the day and dragging you down. I need my breakfast sweets to not go overboard, or I will conch out in the middle of the day. I used pink lady apples, but anything will work, if you want it a little more on the tart side, I would go with Granny Smith and if you like a little sweeter go with something more like the Pink Lady. Ingredients:
2 1/2 C. Cake flour
2 tsp. Baking powder
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1 tsp. Salt
1 C. Almond milk
1 tsp. Apple cider vinegar
1/3 C. Maple syrup
1 Flax egg ( 2 Tbsp. Flax meal+3 Tbsp water= 1 egg)
2 C. Chopped apples of choice
3 Tbsp. Vegan butter ( I use Earth Balance)
1 tsp. Vanilla
Directions:
This should make about four waffles. Enjoy and be happy!
