So, I know that vegans are supposed to be perfect and eat really healthy all the time, but I am a real person. Living a real life. Sometimes you’ve got to treat yo’ self. These vegan cake batter waffles are a really fine way to show everyone that anyone can be vegan. You don’t always have to eat smoothie bowls and avocado toast. I love those things, but I also love some junk food every once in a while.
I am obsessed with sprinkles. My husband doesn’t get it, he thinks they are tasteless. I say, they make me super happy, and I just want to be out there living my best life. All kids, and kids at heart need a super crispy, super crunch, super fluffy rainbow waffle every now and then! This is a 5 minutes one bowl prep and a 10 minutes cook time breakfast! Top with some maple syrup or make it super fancy and top with a vegan frosting or vegan whipped topping!
On my daughters birthday, I put a little candle on top for her to blow out! Then she began to request them all the time. Vegan Cake Batter Waffles
Ingredients
- 1 1/2 C. All purpose flour
- 2/3 C. Vegan vanilla cake mix, I used Arrowhead Mills
- 3 Tbsp. Cane sugar
- 1 tsp. Baking powder
- 1/2 tsp. Baking soda
- 1 tsp. Salt
- 4 Tbsp. Flax meal
- 6 Tbsp. Water
- 1 tsp. Vanilla
- 1 1/2 C. Almond milk
- 3 Tbsp. Vegetable oil
- 1/3-1/2 C. Rainbow sprinkles, vegan I used Sweetapolita's vegan sprinkles
- Non stick spray
Instructions
- In a large mixing bowl, whisk together the flour, cake mix, sugar, baking powder, baking soda and salt. Set aside.
- Now in a small bowl add the flax and water and mix together to make flax eggs.(this is equal to 2 eggs). Let sit for a second to thicken.
- Now in a medium bowl, whisk together the flax eggs, vanilla, almond milk and vegetable oil. Fully combine, then pour into the large mixing bowl with the dry ingredients.
- Whisk together the wet and the dry ingredients until fully combined. Now stir in the sprinkles. Use 1/3 of a cup if you want less sprinkles and 1/2 a cup if you want a lot of sprinkles.
- Heat your waffle iron, spray with non stick spray and pour about 1/3 c. of batter into the waffle iron. Cook according to the waffle iron's instructions. Serve immediately with maple syrup or coconut whipped topping and more sprinkles.
