I made this vegan sesame crunch salad with THIS Roasted Sesame Kewpie Mayo Dressing in mind. I was seeing it all over the place, and honestly, I was jealous. So I did what I always do when I am jealous of a food that is not plant-based: I made my own! This crunchy, delicious, healthy salad will knock your socks off and have you addicted.
What You Need For This Incredibly Crunchy Salad:
- Cabbage: Red and green cabbage, shredded.
- Carrots: They add an amazing flavor and crunch.
- Cucumber: I like to use my mandoline to slice them super thin.
- Cilantro: I know some people hate cilantro, so it can be left out if desired.
- Edamame: I get mine from the freezer section at the store.
- Cashews: Roasted and salted.
- Sesame Seeds: For that extra sesame flavor.

This vegan sesame crunch salad has all the crunchy veggies! Fresh cabbage, carrots, cucumbers, and edamame. But the serious crunch comes from roasted cashews, which not only make this salad amazing but also add some protein. This salad is really good with added protein if you want. I recommend some crispy tofu!

Vegan Sesame Crunch Salad
Super crunchy, delicious salad with roasted sesame dressing.
Ingredients
- 1/2 head of Green cabbage, shredded
- 1/2 head of Red cabbage, shredded
- 1 Large Carrot, sliced or shredded
- 1 English cucumber, sliced
- 1 Cup Edamame, cooked
- 1 Cup Cashews, roasted and salted, chopped
- 1 teaspoon Sesame seeds

Instructions
- Add all the ingredients to a large mixing bowl and toss to combine.
- Serve immediately.
