This butter bean vegan coq au vin feels hard and expensive. However it is actually easy and cheap. Butter beans take the place of chicken in this classic dish. Slowly simmered in red wine, these mushrooms and pearl onions are so dang good. I recommend serving over creamy mashed potatoes. This dish will get you excited for fall. It makes your whole house smell like thanksgiving. After a crazy hot summer, I am here for it and so ready for these cozy meals.
What You Need For This Classic Dish Turned Vegan:
- Olive Oil and Vegan Butter: To start cooking the veggies.
- Garlic, Mushrooms and Pearl Onions: These are sautéed first in oil and butter.
- Tomato Paste and Flour: For flavoring and thickening.
- Vegan “Beef” Broth and Red Wine: These are the liquids for simmering. I like to use Ocean’s Halo “Beef” Broth.
- Bay Leaves and Thyme: Added while simmering and then pulled out before serving.
- Butter Beans: I like to used canned to make my life easier.
This butter bean vegan coq au vin is made entirely in one pot. Unless of course you are serving over mashed potatoes or something else. However the actual making of this coq au vin is covered and simmered in one pot. It is fairly hands-off as well, which I really love! I am in love with the creaminess and heartiness of the butter beans. I think they are an incredible replacement for chicken in this dish. Plus they take no time at all to cook!

Butter Bean Vegan Coq Au Vin
Ingredients
- 1 Tablespoon Olive oil
- 2 Tablespoons Vegan butter, I used Country crock plant butter
- 6 Cloves Garlic, finely chopped
- 16 Ounces Baby bella mushrooms, chopped
- 12 Ounces Pearl onions(defrosted if frozen)
- 2 Tablespoons Tomato paste
- 5 Tablespoons All purpose flour
- 2 Cups Vegan beef broth(I used Ocean's Halo brand) or vegetable broth
- 2 Cups Red wine, vegan (I used Sutter Home)
- 1 Bay leaf
- 3 Sprigs Fresh Thyme
- 2 Cans(15oz each) Butter beans, drained and rinsed(30 oz total)
- Salt and Pepper to taste
- Parsley for topping
Instructions
- Heat the olive oil and vegan butter on medium high in a large pot.
- Pour the garlic and mushrooms into the pot once the butter has melted.
- Sauté, reducing heat as needed until the mushrooms have released their liquids and are beginning to brown. This will take about 10-12 minutes. Season with a pinch of salt and pepper.
- Add the pearl onions to the pot now. Stir and sauté for 3-5 more minutes.
- Now add the tomato paste and another pinch of salt and pepper. Stir to combine.
- Then sprinkle the flour into the pot and stir to coat all the veggies in the flour. It will look like a thick paste has formed.
- Pour the broth and red wine into the pot. Stir to combine everything, making sure there are no lumps of flour.
- Add the bay leaf and thyme and a pinch of salt and pepper.
- Bring to a simmer, reduce heat to low. Cover and let simmer for 15-20 minutes.
- Remove the cover. Pour the butter beans into the pot. Stir. Cover and simmer for about 15 more minutes.
- Taste and adjust seasonings. You will most likely need more salt and pepper.
- Remove the bay leaf and thyme sprigs from the pot.
- Serve over mashed potatoes topped with parsley if desired.

Oh my gosh!! This came out delish! I subbed 50/50 red wine vinegar/water for red wine and it worked!! Yummy

The flavors in this are divine!!! Easy to put together. I keep a powdered vegan beef powder on hand and that’s what I used. My only issue was the texture. I served with mashed potatoes. Soft beans and soft potatoes were less than optimal. Do you think soy curls would work? I don’t want to give up on this glorious flavor, but it was like delicious mush.

I do think soy curls would work well! When I have tested this a number of times and my beans don’t get super soft. If that is not a texture you enjoy though, I think soy curls would be a great alternative.
