Okay, I’ll admit, I made up the name vegan kitchen sink cookie crispies. However, I wanted to find a fun way to celebrate back to school days. Plus getting ever closer to my favorite time of year! Fall! These super simple no bake treats have chocolate, peanut butter, oats, pretzels, chips and chocolate candies. Top them with sea salt for the most incredible sweet and salty snack. They take just a few minutes to throw together and only require one bowl.
What You Need For These Cookie Crispies:
- Dark Chocolate: I used chips to make it easier to melt.
- Coconut Oil: This will solidify the chocolate.
- Peanut Butter: Natural, smooth or crunchy.
- Rice Crisp Cereal: I used Nature’s Path brand.
- Pretzels: I used pretzel sticks and break them up into small pieces.
- Chips: Just plain salted potato chips.
- Chocolate Candies: I recommend Unreal candies or Stern’s Candy Chips.
- Sea Salt: For topping if desired.
I am a huge fan of a sweet and salty snack. These vegan kitchen sink cookie crispies are one of my very favorites. The only work these require is just stirring. Melt the chocolate and coconut oil. Mix everything else into the bowl. Drop little dollops onto parchment paper. Sprinkle with a little sea salt. Then chill. They firm up pretty quickly so you only have to wait for about 10 or 15 minutes to enjoy.

Vegan Kitchen Sink Cookie Crispies
Ingredients
- 24 Ounces Dark Chocolate, vegan
- 1 Tablespoon Coconut oil
- 3/4 Cup Peanut butter, smooth or crunchy
- 2 Cups Vegan Crispy Rice Cereal, I used Nature's Path
- 1 Cup Quick cooking oats
- 1 Cup Pretzel sticks
- 1/2 Cup Potato chips
- 1/2 Cup Vegan chocolate candies*
- Coarse sea salt for topping
Instructions
- Add the dark chocolate and coconut oil to a large heat proof bowl. Melt using a double boiler, or my preferred method, melt in 30 second intervals in a microwave. Stirring after each interval until the chocolate is melted completely and is smooth.
- Add the peanut butter to the bowl with the melted chocolate and whisk to combine.
- Then add the rice cereal and oats to the bowl.
- Crush up the pretzels and chips and then add them too.
- Add the vegan candies. Now stir everything to fully combine. Coating everything evenly in the chocolate.
- Lay parchment paper over a large sheet pan.
- Scoop dollops of the chocolate mixture onto the parchment paper. About 1-2 tablespoons of the mixture for each dollop.
- Top each with a bit of sea salt if desired.
- Chill until the candies have firmed. This will take about 20 minutes or so.
- Keep in the fridge until ready to serve.
