These vegan and gluten free monster cookie bars are the ultimate indulgence without all the guilt! I have been dreaming of monster cookies for sometime now, and just realized all the different brands of vegan chocolate candies coming out that are very reminiscent of M&M’s. So, I feel like they are pretty readily available. I found some at Whole Foods, Lucky’s and Earth Fare. I am sure there are many others, and I will give you some links at the bottom for where you can purchase some online. If that is all too much, you can pick whatever vegan chocolates you would like!
These monster cookie bars are incredibly easy, and require no fancy and expensive flours. I just used oat flour, and I made my own using regular oats that I pulsed in a food processor. Natural peanut butter acts as the other base to these bars, and you know nothing containing peanut butter and chocolate can be bad!
I used the vegan chocolate candies I found and vegan dark chocolate chips! They stud this oat and peanut butter bar so perfectly. Just the right amount of every texture and flavor. Your mouth will water just looking at them. My mouth is watering right now just talking about them! The greatest treat for kids and adults!

Peanut butter and oat based cookie bars studded with vegan candies and dark chocolate!
- 1 C. Peanut butter
- 1/2 C. Vegan butter, I used Earth Balance(room temp)
- 1 C. Brown sugar
- 2 tsp. Vanilla
- 2 Tbsp. Flax meal
- 3 Tbsp. Water
- 2 C. Quick cooking oats
- 1 tsp. Baking powder
- 1/2 tsp. Baking soda
- 1 tsp. Cornstarch
- 1 tsp. Salt
- 1 C. Dark chocolate chips
- 1 C. Vegan chocolate candies(M&M type)
Preheat oven to 350 degrees.
In a large mixing bowl, beat together the vegan butter, peanut butter and brown sugar until light and fluffy.
Make a flax egg by mixing together the flax meal and water in a small bowl. Set aside for a moment to thicken, then add the flax egg to the peanut butter/butter/sugar mixture. Then add the vanilla and beat again, until fully combined.
In a food processor, pulse the oats for a minute or so until it is pretty fine flour, but still has some texture. Stir the baking soda, baking powder, cornstarch and salt into the oat flour. Slowly add the oat flour mixture to the wet ingredients, beating each time until everything is combined.
Stir in the vegan candies and dark chocolate chips.
Scoop dough into a prepared 9x13 in. baking pan, and press down in an even layer. Bake at 350 degrees for 15-20 minutes or until fully cooked and tooth pick comes out clean. Let cool completely. Slice into squares and devour!
