These super easy vegan tofu lettuce wraps are my favorite thing to meal prep! I make a batch of my vegan minced pork, then some of the best yum yum sauce around. You can pack yourself an incredible lunch by putting some of the minced “pork” into one section of a reusable container. Putting some yum yum sauce in another section and then butter or bibb lettuce in another. Take it with you to work or on a hike. Then when you are ready to eat, put the “pork” into the lettuce, drizzle yum yum sauce on top and then fold up the lettuce and enjoy!
What You Need For These Vegan “Pork” Lettuce Wraps:
- Tofu: To make the minced “pork”.
- Shiitakes, Liquid Smoke, Gochujang, Mirin, Soy Sauce, Sesame Oil, Ginger, Garlic: These create the marinade for the tofu.
- Veggies: You add grated veggies to the tofu, I like to use carrots and peppers.
- Vegan Mayo: To start the yum yum sauce.
- Tomato Paste, Rice Wine Vinegar, Paprika, Cane Sugar, Vegan Butter, Garlic Powder: These are whisked into the mayo along with mirin, water, salt and pepper to make the yum yum sauce.
- Lettuce: I recommend butter or bibb lettuce. Anything with large leaves.
I have been obsessed with yum yum sauce since I was a kid. The first time we went to a Teppanyaki restaurant, I was hooked. This recipe will make a good amount of yum yum sauce that you can keep around to dip and drizzle as you please. These easy vegan tofu lettuce wraps make perfect use of the sauce. The vegan minced “pork” and the yum yum sauce wrapped in crunchy lettuce makes an incredible bite of food.

Easy Vegan Tofu Lettuce Wraps
Ingredients
Yum Yum Sauce
- 1 Cup Vegan mayo, I used Follow your Heart
- 2 Tablespoons Tomato paste
- 1 Tablespoon Rice wine vinegar
- 1 Tablespoon Mirin or more rice wine vinegar
- 1 Tablespoon Organic cane sugar
- 1 teaspoon Paprika
- 1 teaspoon Garlic powder
- 1 Tablespoon Vegan butter, melted
- 2-3 Tablespoons Water
- Salt and pepper to taste
For The Lettuce Wraps
- 1 Recipe Vegan Minced "Pork" (link in notes)*
- 1 Head Butter or Bibb lettuce
- Chives and sesame seeds for topping
Instructions
- To prep the lettuce wraps, make the yum yum sauce. Whisk together the vegan mayo, tomato paste, rice wine vinegar, mirin, sugar, paprika and garlic powder.
- Then add the melted butter and whisk.
- Now, thin out with water. Start with 2 tablespoons of water and add another tablespoon if needed. Season with a pinch of salt and pepper. Taste and adjust seasonings. Put the yum yum sauce in the fridge and let chill, it will develop flavor, for at least 4 to 6 hours.
- Now make a batch of minced "pork", it also needs to marinate for 4 to 6 hours.
- When ready to make the lettuce wraps or prep the wraps, cook the minced "pork" according to the directions.
- Let the "pork" cool a bit, then either prep for the week, by adding some "pork" to one section of a container, then yum yum sauce to another section and several pieces of lettuce in another section. Keep in the fridge until ready to eat.
- If eating immediately, put a few tablespoons of the minced "pork" into a lettuce leaf, drizzle the yum yum sauce on top. Top with chives and sesame seeds. Then fold the lettuce up and eat.
