I love a good easy dinner, especially since my dishwasher recently broke. You can get much easier than these vegan gyros! These are “chicken” gyros are made by marinating soy curls and roasting them. Then serving them with vegan tzatziki, inside pita bread with whatever toppings you want. I have an amazing vegan tzatziki sauce recipe, but if you want to make this even easier, Trader Joe’s has an amazing one as well!
What You Need For These Plant-Based Gyros:
- Soy Curls: I always use Butler’s soy curls and you can order them on their website or on Amazon.
- Garlic, Oregano, Salt and Pepper: These are the spices for the marinade.
- White Vinegar, Lemon Juice, Olive Oil, Coconut Cream, and Veggie Broth: These are the liquids you will soak your soy curls in.
- Pita Bread or Flat Bread: Most kinds are already vegan.
- Vegan Tzatziki, Tomatoes, Onion, Lettuce: For topping, but you can use anything else you would like.
One of my favorite things about these vegan gyros is that you are marinating the soy curls while you soak them. You have to soak them anyway, so I feel like you might as well infuse them with flavor while you’re at it! I’m totally in love with these gyros. I ate two in one day and then for dinner made a salad with the “chicken” and all the toppings. Highly recommend!
Why Should You Make These “Chicken” Gyros?
- They are so easy, you’ll be shook.
- The soy curls are incredible, it’s amazing what happens to them when they are marinated like this.
- The combination of these soy curls and the tzatziki will stick with you. Prepare to dream about these.
- This is a great meal prep meal! These soy curls reheat well and the tzatziki stays good for a while.
- I love a meal where everyone can customize their own. Like tacos, or…gyros!
Vegan Gyros
Ingredients
- 3 Cups Vegetable broth
- 2 Tablespoons White vinegar
- 3 Tablespoons Lemon juice, plus more for topping the soy curls
- 1 Tablespoon Olive oil
- 1/4 Cup Coconut cream or full fat coconut milk
- 8 Cloves Garlic, divided
- 1 Tablespoon Oregano
- 1 teaspoon Salt
- Pinch of Black pepper
- 8 Ounces Soy curls, I used Butler's
- 4 pieces Pita or flatbread
- Tomatoes, onions, lettuce, olives for topping
- Vegan Tzatziki*
Instructions
- In a large mixing bowl, whisk together the vegetable broth, vinegar, lemon juice, olive oil, and coconut cream.
- Add the soy curls to the bowl.
- Add in 4 cloves of chopped garlic, oregano, salt and pepper. Stir to combine. Making sure the soy curls are submerged completely in the liquid. If they aren't, add a little bit of water to cover them.
- Let the soy curls marinate for 30 minutes to an hour.
- Preheat the oven to 450 degrees(F).
- Drain the soy curls, but reserve the marinade. Squeeze some of the liquid out of the soy curls so they will be firmer.
- Put the soy curls on a greased sheet pan and spread them out evenly. Put the remaining 4 cloves of garlic on top.
- Pour about 1/2 cup or so of them marinade over them top of the soy curls. You just want a little bit of the liquid on the bottom of the pan.
- Bake for 15 minutes, toss and bake another 8-10 minutes or until firm and brown.
- Squeeze about 1-2 tablespoons of lemon juice over the top of the soy curls and toss.
- Warm your pita or flatbread if desired and then make your gyros.
- Spread vegan tzatziki all over the pita or flatbread. Top with the "Chicken," veggies and more tzatziki.
- Serve immediately.








This looks fantastic! What do you suggest I use to substitute for the coconut milk?? I can’t eat coconut products.
Cashew cream or I used oat milk.
Made this tonight. The whole family enjoyed it. It tastes like an actual chicken gyro. Don’t skip squeezing the lemon juice on the soy curls after they bake, takes it to the next level.
so good, so easy. Save your marinade because I accidentally overcooked my soy curls in the oven (came out a bit dry) and the marinade came to the rescue. I added the marinade to a stove top pan and it seemed to reconstitute the soy curls a bit as well as an extra boost of flavor. Yum!
Made these for dinner last night. The whole family (even my non-vegan husband) loved them. The marinade is soooo good! I actually made them an hour ahead of dinner time, put them in the oven at 200 and poured 1.5 cups of marinade over the top to keep them moist. The marinade is so good! Served them with your tzatziki sauce (so yum!), and cucumber & tomato (diced with a little red onion, mint, dill, salt, pepper, olive oil), & marinated olives. Absolutely loved this recipe! I made it with seitan instead of soy curls and used less broth and coconut cream. Would definitely make it again.
Oh my word, made this last night. Hubby and I loved it! What do you do with the leftover marinade, I have about a cup left. It’s too yummy to throw out!
I plan on marinating some tempeh or tofu…if there’s any left. I tend to warm it up and drizzle over the whole thing after assembly and that puts a good dent in it!
These were great! This was our first time trying soy curls as a meat substitute and even my non-vegan husband and daughter really liked them. Definitely the best vegan gyro I have had.
