In a large mixing bowl, whisk together the vegetable broth, vinegar, lemon juice, olive oil, and coconut cream.
Add the soy curls to the bowl.
Add in 4 cloves of chopped garlic, oregano, salt and pepper. Stir to combine. Making sure the soy curls are submerged completely in the liquid. If they aren't, add a little bit of water to cover them.
Let the soy curls marinate for 30 minutes to an hour.
Preheat the oven to 450 degrees(F).
Drain the soy curls, but reserve the marinade. Squeeze some of the liquid out of the soy curls so they will be firmer.
Put the soy curls on a greased sheet pan and spread them out evenly. Put the remaining 4 cloves of garlic on top.
Pour about 1/2 cup or so of them marinade over them top of the soy curls. You just want a little bit of the liquid on the bottom of the pan.
Bake for 15 minutes, toss and bake another 8-10 minutes or until firm and brown.
Squeeze about 1-2 tablespoons of lemon juice over the top of the soy curls and toss.
Warm your pita or flatbread if desired and then make your gyros.
Spread vegan tzatziki all over the pita or flatbread. Top with the "Chicken," veggies and more tzatziki.
Serve immediately.
