Spread on bread with vegan cheese and browned on each side until it is crunchy on the outside and melty, soft on the inside.
What You Need For This Grilled Cheese:
- Olive Oil: To start to sauté the onions.
- Sweet Onions: Sliced very thin, the sweetness of these onions caramelize so well.
- Agave Syrup: To help to caramelize.
- Veggie Broth: Once the onions are very brown, they are simmered in broth to make them saucier and creamier.
- Fresh Thyme: Gives the onion jam such an amazing flavor.
- Bread: I used Sourdough.
- Vegan Cheese: I spread vegan Boursin on the bread and then added shredded Violife Mozzarella.
- Vegan Butter: I used Earth Balance to grilled the grilled cheese.

Vegan French Onion Grilled Cheese
Ingredients
- 2 Tablespoons Olive oil
- 2 Large Sweet onions, sliced thin
- 1 Tablespoon Agave syrup or cane sugar
- 3/4 Cup Vegetable broth
- 2 Springs Fresh thyme
- 8 Slices Vegan crusty bread, I like to use sourdough or ciabatta
- 1/4 Cup Vegan butter, room temperature
- 1 Cup Vegan cheese, I used Mozzarella style and vegan Boursin
- Salt and Pepper to taste
Instructions
- Heat the olive oil on medium high in a large non-stick skillet.
- Add the sliced onions. Sauté, reducing heat as needed, until the onions begin to brown. About 15 minutes.
- Season with a pinch of salt and pepper and add the agave or sugar. Toss to combine.
- Reduce heat to medium low and continue to sauté until the onion are completely caramelized. About 15-20 more minutes.
- Add the vegetable broth and thyme. Simmer until the broth has been absorbed, about 5-7 more minutes.
- Remove the sprigs of thyme and let the mixture cool slightly.
- This will make 4 sandwiches. Take two slices of bread spread the onion mixture on one side. Then if you are using some spreadable cheese, spread it on the other slice. Top the onions with vegan mozzarella.
- Spread vegan butter on the outside of each slice of bread.
- Heat a non-stick skillet on medium high, then place a sandwich in the skillet, brown on one side, flip and brown on the other side. Making sure the cheese is as melty as possible. Serve immediately. *
