For The Gyro "Meat"
- 1/2 a Yellow onion, roughly chopped
- 6 Cloves Garlic
- 16 Ounces Vegan "beef", I used Beyond Beef
- 1/4 Cup Bread crumbs, vegan
- 1 teaspoon Oregano, dried
- 1 teaspoon Cumin
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
For The Fries
- 1 Bag(28oz) Frozen fries, prepared according to pkg directions
- 1/4 Cup Cucumbers, diced
- 1/4 Cup Red onion, diced
- 1/4 Cup Tomatoes, diced
- 1/4 Cup Vegan Tzatziki*, homemade or store bought
- 1/3 Cup Haven's Kitchen Herby Yuzu Aioli** link below
Preheat the oven to 350 degrees(F).
Add the onion and garlic to a food processor. Pulse a few times to start to finely chop.
Then add the vegan beef, bread crumbs and spices. Then continue to pulse, scraping down the sides as needed until everything comes together. In an almost pate like texture.
Scoop the "meat" mixture into a 8 or 9 inch loaf pan. Press into the pan evenly.
Bake for 30-32 minutes or until the "meatloaf" is cooked through.
While the "meat" bakes, cook the fries. I like to use my air fryer, but you can also cook them in the oven at the same time.(I know the heat won't be high enough for the fries, but it will work fine if you just cook them longer)
Once the "meat" and fries are done, load up the fries.
Slice the "meatloaf" into thin slices, then layer the fries with the slices on top. Then the veggies, then tzatziki, then drizzle the Haven's Kitchen Herby Yuzu Aioli over the fries.
Enjoy!
