I partnered up with Haven’s Kitchen, using their Herby Yuzu Aioli to make these vegan Mediterranean loaded fries! This citrusy, herby aioli is the perfect compliment to these loaded fries. Topped with vegan gyro meat, cucumber, red onion, tomatoes, vegan tzatziki and this incredible aioli! The whole thing is mind-blowing. You can make this for a party, or just for yourself, seeing as how you may not want to share. Baked vegan gyro meat is perfect, easy and pretty much the only thing that needs any effort at all. But, it only takes a few minutes to throw together.
What You Need For These Vegan Loaded Fries:
- Vegan Beef: I used Beyond Beef.
- Onion and Garlic: Blended into the “beef”.
- Breadcrumbs, Oregano, Cumin, Salt and Pepper: These are also mixed into the “beef” to make a gyro inspired “meat”.
- Frozen Fries: Your favorite kind and brand.
- Vegan Tzatziki, Red Onion, Cucumbers and Tomatoes: Optional toppings.
- Haven’s Kitchen Herby Yuzu Aioli: This is absolutely amazing on top of these loaded fries!
These vegan Mediterranean loaded fries are the ultimate comfort food! Plus, they are almost comically easy. The gyro “meat” it made in just a minute in a food processor. Bake, while you prep the fries, I like to use my air fryer for this. Then slice your gyro meat and load up these fries. They are messy in the best way, delicious like nothing I have ever had and so impressive!

Vegan Mediterranean Loaded Fries
Ingredients
For The Gyro "Meat"
- 1/2 a Yellow onion, roughly chopped
- 6 Cloves Garlic
- 16 Ounces Vegan "beef", I used Beyond Beef
- 1/4 Cup Bread crumbs, vegan
- 1 teaspoon Oregano, dried
- 1 teaspoon Cumin
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
For The Fries
- 1 Bag(28oz) Frozen fries, prepared according to pkg directions
- 1/4 Cup Cucumbers, diced
- 1/4 Cup Red onion, diced
- 1/4 Cup Tomatoes, diced
- 1/4 Cup Vegan Tzatziki*, homemade or store bought
- 1/3 Cup Haven's Kitchen Herby Yuzu Aioli** link below
Instructions
- Preheat the oven to 350 degrees(F).
- Add the onion and garlic to a food processor. Pulse a few times to start to finely chop.
- Then add the vegan beef, bread crumbs and spices. Then continue to pulse, scraping down the sides as needed until everything comes together. In an almost pate like texture.
- Scoop the "meat" mixture into a 8 or 9 inch loaf pan. Press into the pan evenly.
- Bake for 30-32 minutes or until the "meatloaf" is cooked through.
- While the "meat" bakes, cook the fries. I like to use my air fryer, but you can also cook them in the oven at the same time.(I know the heat won't be high enough for the fries, but it will work fine if you just cook them longer)
- Once the "meat" and fries are done, load up the fries.
- Slice the "meatloaf" into thin slices, then layer the fries with the slices on top. Then the veggies, then tzatziki, then drizzle the Haven's Kitchen Herby Yuzu Aioli over the fries.
