Make the pizza dough according to recipe instructions.
While the pizza dough rises, make the tempeh sausage if using. Heat the olive oil in a large non-stick skillet on medium-high.
Crumble the tempeh into the skillet then pour the soy sauce and liquid smoke over the crumbles. Then sprinkle all the seasonings over the tempeh. Toss to combine everything evenly.
Saute, reducing heat as needed until the tempeh crumbles are golden brown. About 5-7 minutes. Remove from the heat and let cool.
Once the pizza dough has gone through its first rise, cut the dough into 4 equal pieces if you are making 4 mini pizzas, 2 if you are making 2 medium pizzas, or role into one large ball if making one large pizza.
Let the dough rise for about 15-20 more minutes.
Preheat the oven to 425℉.
Roll or press out into circles on a floured surface.
Place the dough rounds on pizza pans, sprayed with non-stick spray.
Par-bake the crust for 4-5 minutes, remove from the oven and let cool.
Once the dough has cooled, spread pizza sauce over the dough, then sprinkle with the vegan cheese, then top with the tempeh sausage, or whatever topping you want.
Place the pizza(s) in the freezer uncovered for about 2 hours, then wrap each pizza in plastic wrap, then freeze until ready to use.
When you want to make a pizza, preheat the oven to 450℉ and bake for 15-16 minutes or until golden brown.
