Cook the fries according to package directions. I used the air fryer, but whatever your preferred method is will work.
In a large non-stick skillet, make the sauce. Heat the sesame oil on medium high.
Add the garlic and sauté, reducing heat as needed, for 1-2 minutes.
Now, add the gochujang, soy sauce, rice wine vinegar and agave to the skillet. Whisk to combine everything. Reduce heat to low and let simmer for a 1-2 minutes.
While the sauce simmers, whisk together the cornstarch and water, making sure the cornstarch dissolves in the water.
Pour the cornstarch mixture into the skillet and whisk to combine.
Continue to simmer until the sauce has thickened, about 2-3 minutes.
Once the fries are done, pour them into the skillet and toss to fully coat them in the sauce.
Sprinkle in the chives and then serve!

*I like spice, and these are pretty spicy, if you feel like you might want less spice, start with 2 Tbsp of gochujang and then add more if you want.
