Marinate the tofu first. If you are using extra firm tofu, you will need to press it first. Once the tofu has been pressed, cut the block of tofu into 3-4 slices through the side. I like to trim mine to make it look like chicken cutlets, but that is optional!
Place the tofu in a medium sized mixing bowl, then grate the garlic over the tofu. Pour the soy sauce or tamari, olive oil, and lime juice over the tofu.
Sprinkle in the cumin, paprika, oregano, and pepper over the tofu. Then rub the marinade into the tofu. Let the tofu marinate for at least two hours, but I like to do it the night before I plan to make it.
When ready to make the tofu, you have two options for cooking it. One: preheat the oven to 400 degrees(F), bake for 15 minutes on a baking sheet sprayed with non-stick spray or lined with a baking mat, flip and bake for another 10-15 minutes or until the tofu is firm and nicely browned.
Two: you can grill for about 15 minutes, flipping half way through. I used my air fryer grill!
While the tofu cooks, make the sauce. Add the jalapenos, cilantro, green onions, vegan yogurt, lime juice, salt and pepper to a food processor. While the processor is running, drizzle the olive oil into the sauce through the top. Let process until the sauce is completely smooth.
Once the tofu is done, serve the tofu with the green sauce drizzled over the top with any side dishes you want!
