In a large mixing bowl or the bowl of a stand mixer, pour in the warm water. Then sprinkle the yeast and then the sugar into the water.
Let sit for about 5 minutes or until the yeast has bloomed. It will be bubbly and frothy.
Now add the olive oil and salt and begin to stir together, either with a wooden spoon or with the dough hook attachment for the stand mixer.
Then start adding the 2 cups of flour a little at a time, continuing to stir or while the dough hook is running.
Once the flour has all been added, begin to knead or let the dough hook run until the dough comes together and is a smooth ball. This will take a few minutes.
Once you have formed a ball, make sure it is no longer sticky, adding a tablespoon more or so of flour if the dough is still sticky, continue to knead for another 1 to 2 minutes.
Remove the dough ball from the bowl, spray the bowl with non-stick spray and then put the dough ball back in the bowl.
Cover the bowl with a kitchen towel, and let rise in a warm dry place(I like to preheat my oven to 200 degrees(F) and then turn the oven OFF and let the dough rise in the oven), for about 1 hour or until the dough has doubled in size.
Once the dough has risen, turn the dough out onto a floured surface and then either roll out one large pizza, cut in two and make 2 medium pizzas or cut into 3 or 4 for small personal pizzas.
Roll the dough out to any thickness you like your pizza crust.
Place on a pizza pan, top with your favorite toppings and bake at 450 degrees(F), for 10 to 15 minutes!
