Vegan Snickers Popcorn

Vegan caramel corn, mixed with salty peanuts and drizzled with chocolate! Oh yeah!

  • Preheat oven to 250 degrees.
  • Pour popped popcorn and peanuts into a large mixing bowl.
  • Now, make the caramel sauce. Heat the brown sugar, agave and vegan butter on medium high, stirring constantly until the sugar has dissolved. Turn the heat to low and simmer for about 5 minutes, stirring,  until everything is bubbling and thick. Remove from heat, and add the baking soda, stir(it will foam up, this is supposed to happen).
  • Next stir in the vanilla and salt, then pour the caramel over the popcorn and peanuts immediately. Toss with a large spoon or spatula to coat all the peanuts and popcorn.
  • Spread out onto a baking sheet sprayed with non stick spray. 
  • Bake at 250 degrees for 45-55 minutes until the caramel has firmed up and the popcorn is crispy. 
  • Next melt the chocolate in the microwave in 30 second intervals, stirring after each time until completely melted. Stir the coconut oil into the chocolate until fully combined. Let cool for a minute, then drizzle the chocolate over the popcorn. 
  • Let everything cool for 10-15 minutes, then serve! You can store in an air tight container for future snacking!
