Ingredients

Tofu Chorizo

Pizza

  • 1 batch Pizza dough, store bought or homemade
  • 1 C. Fig paste
  • 1/2 C. Arugula
  • 1/4 C. Red onion, sliced

Instructions

  • Make the tofu chorizo first, squeeze the tofu in your hands to release some water. Start to crumble and squeeze out as much water as you can. Crumble completely into a bowl. Toss with the apple cider vinegar.
  • Add all the remaining seasonings to the bowl, and toss to coat the crumbled tofu fully.  Leaving out only the olive oil.
  • Heat the olive oil in a large skillet on medium high. Add the tofu, and cook stirring occasionally until it starts to brown and get crispy. This make take 10-15 minutes. Take off the heat.
  • Preheat the oven to 450 degrees. Cut the dough in half to make 2 small pizzas. Roll out on a floured surface, pretty thin either round or rectangular. Place on a pizza pan or sheet pan that has non stick spray.
  • Cover the pizza dough in fig jam, then spread the tofu chorizo over the top. Bake at 450 degrees for 10-15 minutes.
  • When pizza is brown and crisp, remove from the oven, top with arugula and onion. Serve immediately!
