Vegan Curry Seitan Chicken Salad

Seitan, cashews, golden raisins, celery and green onion are mixed with an amazing curry vegan mayo sauce!

  • 2 C. Seitan, chopped (homemade or store bought)
  • 1/3 C. Cashews
  • 1/2 C. Golden raisins
  • 1 Celery stalk, chopped
  • 2 Scallions, chopped
  • 1/3 C. Vegan mayo
  • 1 tsp. Agave nectar
  • 2 tsp. Curry powder
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Turmeric
  • Salt and Pepper to taste


  • Add the chopped seitan, cashews, raisins, chopped celery and chopped green onions to a medium sized mixing bowl.
  • Now add in the vegan mayo, agave and seasonings. Stir to coat everything completely and make sure everything is fully incorporated. Taste and adjust seasoning.
  • Serve immediately, or place in fridge until ready to serve(it actually may taste even better the next day).
