Make the tofu chorizo first, squeeze the tofu in your hands to release some water. Start to crumble and squeeze out as much water as you can. Crumble completely into a bowl. Toss with the apple cider vinegar.
Add all the remaining seasonings to the bowl, and toss to coat the crumbled tofu fully. Leaving out only the olive oil.
Heat the olive oil in a large skillet on medium high. Add the tofu, and cook stirring occasionally until it starts to brown and get crispy. This make take 10-15 minutes. Take off the heat.
Preheat the oven to 450 degrees. Cut the dough in half to make 2 small pizzas. Roll out on a floured surface, pretty thin either round or rectangular. Place on a pizza pan or sheet pan that has non stick spray.
Cover the pizza dough in fig jam, then spread the tofu chorizo over the top. Bake at 450 degrees for 10-15 minutes.
When pizza is brown and crisp, remove from the oven, top with arugula and onion. Serve immediately!
