What You'll Need: 

Cashew Cream Raw cashews Vegetable Broth Lemon juice Salt and pepper Olive oil Garlic Sweet onion Lemon Italian seasoning Nutritional yeast Agave syrup Lasagna sheets

Soak cashews 6-8 hours or overnight. Make cashew cream. Set aside.

Sauté garlic and onions until caramelized. Add lemon juice, veggie broth, Italian seasonings, agave, and nutritional yeast.

Add cashew cream and whisk to combine. Season with a few pinches of salt and pepper. Bring to a simmer.

Break the lasagna sheets into about 1-2 inch pieces. Then add them to the soup.

Simmer, stirring frequently until the noodles are al dente. Check your package for timing.  Once the noodles are done, taste and adjust seasoning.

Serve immediately. I like to add some spinach or greens to my bowl and pour the soup over so my spinach doesn't get over cooked! Top with fresh herbs!
