The best dang vegan chicken salad of all time! Just saying.
As a kid, my parents used to make curry chicken salad. I have seen it in a bunch of stores recently, which reminded me, I love curry chicken salad. So here is how my weekend conversation with my husband always goes; Me: Chris….will you make me some seitan? Chris: Umm…sure, how much? Me: A lot! Chris: You know you can always make it yourself, right? Me: Nah, yours is the best! Then of course he makes me seitan, and I make amazing things for you! Like Vegan Curry Seitan Chicken Salad!
This vegan curry seitan chicken salad is sweet, aromatic, a little spicy, a little crunchy and amazing. Once the seitan is done, or if you buy a package of seitan, this is a five minute meal. You can serve with crackers or make a sandwich, or just eat it by itself(like I usually do). It is GD delicious!
Have you ever made your own seitan? It is actually quite easy. Despite the fact that I make my husband do it. The only reason for that is because I am super lazy. So if you just buy a package of seitan, I can’t blame you, and must admit, I have done that on occasion. However, if you want to give it a try, I urge you not to be scared. It is really very simple.
I have my husband make a big batch all at once, then I can use it for a bunch of different recipes throughout the week. It is also WAY cheaper to make your own seitan. So, if you are trying to be a vegan on a budget, it is definitely something I recommend getting proficient at. Chris had made seitan so many times now, he could probably do it in his sleep.
Either way you decide to handle the protein aspect of this recipe, the results will be incredible! You can even switch it up and try chickpeas or broccoli or any dang thing you want. There is no question in my mind the sauce of this salad would taste good on anything!

Vegan Curry Seitan Chicken Salad
Ingredients
- 2 C. Seitan, chopped (homemade or store bought)
- 1/3 C. Cashews
- 1/2 C. Golden raisins
- 1 Celery stalk, chopped
- 2 Scallions, chopped
- 1/3 C. Vegan mayo
- 1 tsp. Agave nectar
- 2 tsp. Curry powder
- 1/2 tsp. Garlic powder
- 1/2 tsp. Turmeric
- Salt and Pepper to taste
Instructions
- Add the chopped seitan, cashews, raisins, chopped celery and chopped green onions to a medium sized mixing bowl.
- Now add in the vegan mayo, agave and seasonings. Stir to coat everything completely and make sure everything is fully incorporated. Taste and adjust seasoning.
- Serve immediately, or place in fridge until ready to serve(it actually may taste even better the next day).
this was delicious, I made it late last night and let it sit in the fridge overnight. The flavor was so good, this will be on regular rotation

This is so delicious and will be eaten up very quickly!! I made my own seitan. For salt, I used kala namak salt making it taste like egg salad.

To proceed with your recipe here, I don’t need to cook the seitan any further? Just dice, and that’s it? It’s considered fully cooked?

My feeling is that when I ate chicken it was bland until seasoned. I’d like to recreate that with seitan ideally.
