If you, like me, really miss peanut butter cups, well, I have a treat for you! These no bake vegan peanut butter cup bars are so dang easy. Plus, they frankly taste better than any peanut butter cup I have ever had. Make these for Easter if you miss those eggs. Or for Halloween if you miss those pumpkins. I promise no one will miss them any longer! These peanut butter and chocolate bars can are pretty fool proof and fast. The only thing that takes any time at all, is just chilling the bars.
What You Need For These Chocolate Peanut Butter Bars:
- Peanut Butter: I guess that was fairly obvious.
- Vegan Butter: I used Country Crock Plant Butter.
- Crackers: Ritz like crackers, I used Back to Nature brand.
- Powdered Sugar: I like to use organic to ensure it is vegan.
- Vegan Chocolate: I used Enjoy Life brand. You can use chips or chunks since it will be melted.
I wanted to get these no bake vegan peanut butter cup bars ready for you in time for Easter. That way all us vegans can enjoy those peanut buttery treats like everyone else! You only need 5 ingredients or 6 if you want sea salt on top. No need to turn on your oven. And you get 16 servings out of this recipe, so share with friends and family. Or just save them for yourself, because they keep really well in the fridge.

No Bake Vegan Peanut Butter Cup Bars
Ingredients
Peanut Butter Layer
- 1 1/2 Cups Vegan Ritz style cracker crumbs, I used Back To Nature(about 36 crackers)
- 3/4 Cup Vegan butter, melted
- 3/4 Cup Peanut butter
- 1 1/2 Cups Powdered sugar, organic
- Pinch of Salt
Chocolate Layer
- 12 Ounces Vegan chocolate chips, I used Enjoy Life
- 1/3 Cup Peanut butter
- Sea salt for topping, optional
Instructions
- Line an 8×8 or 9×9 baking dish with parchment paper.
- Now, I make the cracker crumbs in the food processor. Just make sure you have 1 1/2 cups of crumbs.
- Then add the melted butter, peanut butter, powdered sugar and salt to the food processor with the cracker crumbs. Then pulse the mixture in the food processor until the mixture is smooth. Set aside.
- Now, make the chocolate layer. Melt the chocolate. You can either melt using a double boiler, Or, I usually just melt the chocolate in 30 second intervals in the microwave, stir after each 30 seconds, until the chocolate is melted.
- Add the peanut butter to the chocolate and whisk until fully combined and smooth.
- Pour half the chocolate into the bottom of the baking dish. Smooth out evenly.
- Chill for about 5 minutes in the freezer.
- Now, pour the peanut butter layer over the chocolate and smooth out evenly.
- Pour the remaining chocolate over the top of the peanut butter layer and smooth it out evenly. Sprinkle with sea salt if desired.
- Chill in the fridge for about 3 hours. Then cut into squares and serve.
- Keep in the fridge.
