I’ve been really into meal prepping lately. Breakfasts and lunches that I can just grab and heat or just eat are my jam at the moment. These meal prep vegan BBQ “chicken” skewers served with green goddess chopped salad is my favorite. Super simple BBQ “chicken” can be put in one compartment. Then chopped salad in another, with the best green goddess dressing on the side. Then you’re ready to eat, just toss the salad with the dressing and either heat the “chicken” and eat separately. Or leave chilled and put the “chicken” on top of the salad. It is so delicious, either way! And the way you eat it is up to you!
What You Need For This Yummy Vegan Meal Prep Idea:
- Vegan Mayo: Your favorite brand will do! This is the base of the dressing.
- Parsley, Dill, Mint, Tarragon and Chives: These are the fresh herbs that go into the green goddess dressing.
- Lemon Zest and Lemon Juice, Capers, Salt and Pepper: These are the remaining ingredients for the dressing.
- Romaine Lettuce, Pepperoncini, Red Onion and Olives: For the chopped salad.
- Soy Curls: I used Butler’s. These are the “chicken”.
- BBQ Sauce: Your favorite brand of vegan BBQ sauce will work! I do recommend a sweet one. It goes well with the tangy, salty, dressing.
This is one of my current favorite meals! This meal prep vegan BBQ “chicken” with green goddess chopped salad is healthy, fast and so dang good! This recipe makes a good amount of the green goddess dressing so you have extra for dipping the “chicken”! Because the crispy soy curls with BBQ sauce goes really well with the dressing! I made this meal prep friendly to make enough for 4 meals! With two skewers each and a nice side salad!

Meal Prep Vegan BBQ “Chicken” Skewers
Ingredients
BBQ "Chicken"
- 8 Ounces Soy curls, I used Butler's(soaked/drained according to pkg. directions.)
- 1 Cup BBQ sauce, vegan
- A few pinches of Salt and pepper
Green Goddess Chopped Salad
- 1 Head Romaine, chopped
- 1/2 Cup Pepperoncini, chopped
- 1/2 a Red onion,chopped
- 1/2 Cup Olives, I used Kalamata, chopped
- 1 Cup Vegan mayo, I used Follow your Heart
- 1 Cup Parsley
- 1/4 Cup Dill, fresh
- 1/4 Cup Mint, fresh
- 1/4 Cup Tarragon, fresh
- 1/4 Cup Chives or green onions
- 1/2 teaspoon Lemon zest
- 1 Tablespoon Lemon juice
- 2 teaspoons Capers
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2-3 Tablespoons Water
Instructions
- Once you have soaked and drained the soy curls, squeeze as much liquid out of them as you can.
- Put them into a dry bowl. Sprinkle the soy curls with a few pinches of salt and pepper and toss to coat.
- Now, you need 8 wooden skewers that have been soaked so they don't burn. Thread the soy curls onto each skewer until they are all full(see video).
- Brush each skewer with BBQ sauce generously all over the soy curls. Now, either using a grill pan or the grill of an air fryer, you want to grill each skewer for 3 to 5 minutes per side. Or until they are nice and brown and firm. Then brush with extra BBQ sauce.
- Alternately, you can bake the skewers at 425 degrees(F), for 10 to 15 minutes, then brush with extra BBQ sauce and bake for 2 to 4 more minutes.
- While the skewers are grilling or baking, make the salad. In a large bowl toss together the lettuce, pepperoncini, red onion and olives.
- Then in a food processor combine the vegan mayo, herbs, lemon zest and juice, capers, salt and pepper. With the food processor running drizzle the water through the top. Process until smooth, it may take a few minutes.
- Once the "chicken" skewers are done, either toss the salad with about half the dressing, then serve the salad with the skewers on the side and extra dressing for dipping.
- Or doing meal prep, place the dry salad into one compartment, two skewers in another compartment and the dressing in another compartment or next to the skewers. This will make 4 meals!
- When ready to eat, toss the salad with the dressing, and either heat the skewers or serve them cold on top of the salad!
