This popcorn has it all. Caramel, peanuts and chocolate. The ultimate indulgence that you don’t have to feel bad about(I mean, you never have to feel bad about eating amazing food)! Popcorn is my husband’s favorite food, no seriously. Favorite food of all time. So, I made this snickers popcorn in his honor.
My husband and I have discussed what our last meals would be. His is always popcorn. I know crazy, right? Of all the things. Popcorn. I think he has changed his mind, and will now be requesting this snickers popcorn. Super easy baked caramel corn mixed with nice salty peanuts, then drizzled with chocolate.
The chocolate is melted and then mixed with coconut oil so that it hardens very easily once the popcorn has cooled a bit, that way it won’t rub off all over your hands. This is kind of a messy snack anyways, so I tried to make it a little better!
The caramel sauce takes all of 5 minutes, then it is drizzled over the popcorn and mixed to coat. The peanuts are also mixed in. Then all you have to do is bake, add the chocolate drizzle and serve to your friends and family. You are going to want to share this with loved ones. It would be mean not too.
Addictive, crunchy, salty, sweet and totally amazing. This is your new favorite snack for family movie night, or solo movie night(been there). It is your new favorite go to party snack. It may even be your new favorite thing. Period. This vegan snickers popcorn is incredibly easy and incredibly perfect. I hope you enjoy! This is a big family favorite with my family, and once you try it you will definitely understand!
Vegan Snickers Popcorn
Ingredients
- 8 C. Popped popcorn
- 3/4 C. Peanuts, roasted and salted
- 1/2 C. Brown sugar
- 2 Tbsp. Agave
- 1/4 C. Vegan butter, I used Earth Balance
- 1/4 tsp. Baking soda
- 1/2 tsp. Vanilla
- 1/2 tsp. Salt
- 4 oz. Dark chocolate, vegan
- 1/4 C. Coconut oil
Instructions
- Preheat oven to 250 degrees.
- Pour popped popcorn and peanuts into a large mixing bowl.
- Now, make the caramel sauce. Heat the brown sugar, agave and vegan butter on medium high, stirring constantly until the sugar has dissolved. Turn the heat to low and simmer for about 5 minutes, stirring, until everything is bubbling and thick. Remove from heat, and add the baking soda, stir(it will foam up, this is supposed to happen).
- Next stir in the vanilla and salt, then pour the caramel over the popcorn and peanuts immediately. Toss with a large spoon or spatula to coat all the peanuts and popcorn.
- Spread out onto a baking sheet sprayed with non stick spray.
- Bake at 250 degrees for 45-55 minutes until the caramel has firmed up and the popcorn is crispy.
- Next melt the chocolate in the microwave in 30 second intervals, stirring after each time until completely melted. Stir the coconut oil into the chocolate until fully combined. Let cool for a minute, then drizzle the chocolate over the popcorn.
- Let everything cool for 10-15 minutes, then serve! You can store in an air tight container for future snacking!
