Okay guys, hear me out. Does this combination sound a little odd to you? I promise it is not. The sweetness of the figs, and the spicy saltiness of the chorizo actually makes more sense than anything ever has in my life! I am non stop throwing recipe ideas at my husband, however, this time he was a little bit hesitant. The second he walked through the door, I shoved a piece of this Fig and Chorizo Pizza in his face, and he definitely ate crow, not literally, of course. He told me I was right, which I absolutely love hearing.
I made my own totally delicious vegan Chorizo, and I think is the way to go. Purchasing a cheap package of extra firm tofu and doing the rest of the work is not only much cheaper, it is super fun! I furiously seasoned the tofu and made it brown and crispy. Placing that on a bed of fig jam, topping it with fresh arugula and red onion, and hot damn. Your eyes may roll back in your head, just warning you!
I really love having a sweet element on my pizzas, pineapple is a personal favorite, but I do think there needs to be balance. I needed something extra salty to counteract the figs. It seems like most people use a salty meat product. So, I thought my tofu Chorizo was the perfect accompaniment! Let me tell you, I was not wrong!
Top this pizza with fresh arugula and red onion to create a very well rounded flavor profile with the peppery freshness of the raw veggies. I think this is undoubtedly one of the most delicious pizzas I have ever had. You will not even miss the cheese, I promise.
This can also be a super quick weeknight meal, if you purchase premade pizza dough. Sometimes, I make my own, and sometimes I buy it, it really depends on how much time I have. Trader Joe’s has an amazing vegan pizza dough, which is what I always use when I am in a hurry. I will attach my pizza dough recipe, if you feel up to it. If not, feel free to buy it, and you can have this ready in about 20 minutes! I hope you enjoy! Here is my basic pizza dough recipe.
Vegan Fig and Chorizo Pizza
Ingredients
Tofu Chorizo
- 1 Block Extra firm tofu
- 2 Tbsp. Apple cider vinegar
- 2 tsp. Cumin
- 1/2 tsp. Coriander
- 1/4 tsp. Cinnamon
- 2 tsp. Oregano
- 1 Tbsp. Garlic powder
- 1/4 tsp. Black pepper
- 2 tsp. Salt
- 2 Tbsp. Chili powder
- 2 tsp. Smoked paprika
- 2 tsp. Liquid smoke
- 2 Tbsp. Olive oil
Pizza
- 1 batch Pizza dough, store bought or homemade
- 1 C. Fig paste
- 1/2 C. Arugula
- 1/4 C. Red onion, sliced
Instructions
- Make the tofu chorizo first, squeeze the tofu in your hands to release some water. Start to crumble and squeeze out as much water as you can. Crumble completely into a bowl. Toss with the apple cider vinegar.
- Add all the remaining seasonings to the bowl, and toss to coat the crumbled tofu fully. Leaving out only the olive oil.
- Heat the olive oil in a large skillet on medium high. Add the tofu, and cook stirring occasionally until it starts to brown and get crispy. This make take 10-15 minutes. Take off the heat.
- Preheat the oven to 450 degrees. Cut the dough in half to make 2 small pizzas. Roll out on a floured surface, pretty thin either round or rectangular. Place on a pizza pan or sheet pan that has non stick spray.
- Cover the pizza dough in fig jam, then spread the tofu chorizo over the top. Bake at 450 degrees for 10-15 minutes.
- When pizza is brown and crisp, remove from the oven, top with arugula and onion. Serve immediately!
