Vegan Spicy Smashed Potato Salad

A few years ago, a friend introduced me to a potato salad that was so out of control delicious, that I could never get it out of my head. The original recipe was not vegan, but my friend used vegan mayo to make it so, just for me. It was a spicy fried potato salad, and neither of us can find the original recipe. So, I made a version reminiscent of the one I had many years ago. This vegan spicy smashed potato salad is hands down, the best potato salad you will ever eat.


Vegan Mexican Street Corn Salad

My husband lived in Mexico for a while teaching English, before he started teaching 4th grade general education. The only thing he seems to miss about his days there is the food. He loves elote! We have talked a lot about how to create a replacement for Cojita cheese. Something that matches it’s salty crumbly goodness. I can not take credit for the idea of salt baking tofu, it was my husband’s idea. However, I will say it worked amazingly well! It is the perfect texture and has that perfect saltiness. So, of course, we had to make Mexican Street Corn, but decided to make it in salad form. This Vegan Mexican Street Corn Salad is addictive and downright delicious!


Vegan Milk and Cereal Cake

Yes, you heard me correctly. Vegan Milk and Cereal Cake. I had this crazy idea to make a cake where the batter was filled with cereal and instead of frosting, I would use coconut milk whipped cream to give you the flavors of eating milk and cereal in cake form. Would this work? Does this work? Damn right it does. Not only does this work, it is amazing. You can use whatever kind of cereal you want, just make sure it is vegan. 


Vegan Cinnamon and Sugar French Toast Sticks

Have you ever had the French Toast Sticks from Burger King? I looooooved them when I was a wee child. We were always pretty busy when I was a kid, my dad worked really long hours, and we had a lot of fast food breakfasts. My dad was always into eating right and staying active, but didn’t know exactly what that meant until more recently. He eats better now, and is more active than most people I know. I digress though, back to childhood, there were many a morning I chowed down on some French toast sticks, dipping them into the little container of maple syrup they came with. 


Vegan Everything Bagel Cheese Ball

Everything bagels are my favorite bagels. That is all I used to eat, and I didn’t branch out until I got a little older. I love the flavor combination, it is so delicious. It is comforting and perfect. I have been wanting to make my own everything bagel spice blend for a while, and use it in an imaginative way! When I finally realized that the best thing to go with this particular spice blend, is cheese. A cheese ball with everything bagel spice mixed in, and then crusted in the spice was what I decided, and it is so G.D good. 


Vegan and Gluten Free Monster Cookie Bars

These vegan and gluten free monster cookie bars are the ultimate indulgence without all the guilt! I have been dreaming of monster cookies for sometime now, and just realized all the different brands of vegan chocolate candies coming out that are very reminiscent of M&M’s. So, I feel like they are pretty readily available. I found some at Whole Foods, Lucky’s and Earth Fare. I am sure there are many others, and I will give you some links at the bottom for where you can purchase some online. If that is all too much, you can pick whatever vegan chocolates you would like!


Vegan Ricotta, Basil and Sausage Stuffed Shells

I was not a huge fan of ricotta when I was young. I didn’t love lasagna or stuffed shells. As I got older, I thought I would try again, and started using ricotta for various things when I was a vegetarian. I slowly fell in love with ricotta, and then became a vegan, and that abruptly stopped. My husband is part Italian and grew up eating stuffed shells and other dishes that are ricotta heavy. We both decided, we needed things that include ricotta back in our lives. These vegan ricotta, basil and sausage stuffed shells are life!


Vegan Fried Pickles with Mississippi Comeback Sauce

My husband loves fried pickles. He calls himself a connoisseur of fried pickles, and tries them everywhere we go. He has given them bad reviews, good, and excellent. I wanted to top them all though, and make the most delicious fried pickles he has ever had, that just happen to be vegan. He hates fried pickle spears, and I can understand this. To get maximum crunch, your really need the a chip, it is thin and you can get the ultimate amount of batter on them. So they had to be dill chips! These vegan fried pickles with Mississippi comeback sauce are his favorite fried pickles thus far.


Vegan Birthday Cake Ice Cream Sandwiches

There are an overwhelming amount of birthdays in my family in March. I wanted to find some way to honor them, something totally amazing to show some love. These vegan birthday cake ice cream sandwiches definitely do the trick! Cake batter ice cream is my favorite, there is a local old school soda fountain that has amazing vegan ice cream, and I love their cake batter ice cream. I was thinking I would make it easy by creating a no churn ice cream, and then make it even better by turning it into a sandwich!


Vegan Tuna Tarragon Pasta Salad

Okay, guys. Hear me out! This is the greatest pasta salad of all time, and lucky for you, this recipe makes a lot, so you can share with friends. Just in time for some Spring and Summer cookouts! When I was a kid, my dad used to take us to Sweet Tomatoes all the time. They have a tuna tarragon pasta salad. It was my favorite thing ever, and frankly one of the only things I have truly missed after going vegan. Yesterday, I smiled, I was so damn excited! This tastes exactly like what I have been missing all these years, and I am so happy to share it with you!
